I've been making Kombucha in all of its probiotic goodness! For those of you who don't know what kombucha is, you can check it out here. Basically it's a fermented tea that's all sorts of good for your guts!

I didn't have anyone to get a SCOBY from, so I grew my own from a bunch of tea and a store-bought bottle of Kombucha. Into the cupboard she went.

About three weeks of fermenting and there she is, lovely lady growing on top.

I then made a new batch of tea,

put the SCOBY in, and let it ferment for another week.

At the end of the week, I decanted it into smaller bottles, added some natural sweeteners*, and let them ferment for another two days. I preserved the SCOBY in the big container (on the left) for brewing another batch - which I promptly started.

After two days we cracked the finished product and it was SUCCESS! DELISH! I GREW A SCOBY AND MADE KOMBUCHA! I'm pretty proud of myself if you can't tell by my yelling!

After my first batch, I've now made three more and its safe to say the family is hooked. Is it making any positive changes to our guts? Hard to say. Is it delicious? Heck yes! So we'll keep going either way!

*To sweeten/ferment further, I've so far tried:
  • Blueberries
  • Lemon
  • Lime
  • Mint and agave
  • Cherries
  • Candied ginger
  • Elderflower
